Description : Selim berries, also known as Ethiopian pepper, are of great importance to the local African economy. These berries are distinguished by their fresh fragrance, marked by notes of menthol and turpentine. When tasted, they reveal complex notes of citrus, camphor, floral flavors and exotic woods. To get the most out of them, we recommend grinding them in a mortar just before use, releasing all their aromatic complexity. This is the basic ingredient of Touba coffee.
Ideal with : marinades, vegetables (carrots, cabbage, celery, sweet potatoes, etc.), poultry and scallops.

The legend tells that ...
... Calico Jack, real name John Rackham, made history as a daring pirate in the early 18th century. His banner, a skull surmounted by crossed swords, struck terror into the hearts of sailors. But it's the mystery of the silent night when Jack disappeared that has become legendary. Tales tell of a full-moon night when his ship was shrouded in an unearthly fog off the coast of Jamaica. As the fog dissipated with the first light of dawn, Calico Jack's ship disappeared, leaving behind only the calm waves and the whisper of fate. Years later, sailors still claim to see the specter of Jack's ship sailing silently beneath the moonlight, a mysterious reminder of the pirate who defied sea and time.
This is just a story, a legend... But in every legend lies a piece of truth
